How it's used: It's not typically eaten on its own. Instead, it's the first step in cooking. Proteins (chicken, beef, goat, conch, fish) are marinated in it for hours or overnight. It's sautéed at the beginning of making stews and rice dishes such as (diri djondjon or diri kole), it can also be used for cooking black beans to build an depth of flavor.
