"Djondjon" rice recipe

Ingredients

  • 3 1/2 cups basmati rice, washed until water runs clear
  • 4 tablespoons Lakay Djondjon paste
  • 1/2 onion, minced
  • 1 green onion, diced
  • 3 tablespoons garlic, minced
  • 1 package (8 oz) frozen sweet peas, thawed
  • 1/4 cup olive oil (or oil of your choice)
  • 8 cups water
  • 1/2 teaspoon Piman Lakay (Haitian hot pepper sauce)
  • 2 tablespoons kosher salt
  • 1 chicken stock cube (optional)
  • 1/2 teaspoon black pepper

Instructions

  • In a large pot over medium heat, warm the oil. Add the thawed sweet peas and sauté for 2 minutes.
  • Add the minced garlic, onions, and green onion. Sauté for an additional minute.
  • Stir in the Lakay Djondjon paste, Piman Lakay, and chicken stock cube (if using).
  • Cook for 1 minute to bring together the flavors.
  • Pour in 8 cups of water. Add salt and pepper & increase heat to high and bring the mixture to a boil.
  • Once boiling, add the washed rice. Stir gently to combine.
  • When you see the rice grains rising to the surface, reduce the heat to low. Cover the pot with a tight-fitting lid.
  • Let the rice simmer for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
  • Remove from heat and let stand, covered, for 5 minutes.
  • Fluff the rice with a fork before serving.
