"Djondjon" rice recipe
Ingredients
- 3 1/2 cups basmati rice, washed until water runs clear
- 4 tablespoons Lakay Djondjon paste
- 1/2 onion, minced
- 1 green onion, diced
- 3 tablespoons garlic, minced
- 1 package (8 oz) frozen sweet peas, thawed
- 1/4 cup olive oil (or oil of your choice)
- 8 cups water
- 1/2 teaspoon Piman Lakay (Haitian hot pepper sauce)
- 2 tablespoons kosher salt
- 1 chicken stock cube (optional)
- 1/2 teaspoon black pepper
Instructions
- In a large pot over medium heat, warm the oil. Add the thawed sweet peas and sauté for 2 minutes.
- Add the minced garlic, onions, and green onion. Sauté for an additional minute.
- Stir in the Lakay Djondjon paste, Piman Lakay, and chicken stock cube (if using).
- Cook for 1 minute to bring together the flavors.
- Pour in 8 cups of water. Add salt and pepper & increase heat to high and bring the mixture to a boil.
- Once boiling, add the washed rice. Stir gently to combine.
- When you see the rice grains rising to the surface, reduce the heat to low. Cover the pot with a tight-fitting lid.
- Let the rice simmer for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
- Remove from heat and let stand, covered, for 5 minutes.
- Fluff the rice with a fork before serving.
