Spaghetti Djondjon Recipe

Ingredients:

1 lb of Spaghetti pasta
2 garlic cloves, minced
2 tablespoons butter
3 tablespoons fresh parsley, chopped (optional)
2 tablespoons of kosher salt
1/4 teaspoon of black pepper
3 tablespoons Djondjon lakay paste
1 1/4 cups high-quality grated Parmesan cheese, grated
1 onion, chopped
1 tablespoon ground spice of your choice
2 tablespoons olive oil

Instructions:

Step 1: In a large pot, bring water to a boil. Add 2 tablespoons of kosher salt and a basil leaf (if desired). Add 1 lb of Spaghetti pasta and cook according to package instructions until al dente.

Step 2: In a large preheated pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, minced garlic, and 1 tablespoon of your chosen ground spice. Sauté for 2 minutes.

Step 3: Add 3 tablespoons of Djondjon lakay paste to the pan and cook for 2 minutes over low heat.

Step 4: Add 2 ladles (about 1 cup) of pasta cooking water to the pan. Season with a pinch of salt and 1/4 teaspoon of black pepper. Add 2 tablespoons of butter and simmer for 2 minutes.

Step 5: Drain the cooked pasta, reserving some pasta water if needed. Add the pasta to the sauce in the pan. Toss to coat the pasta evenly with the sauce.

Step 6: Stir in the chopped parsley (if using) and cook for an additional 3 minutes, allowing the flavors to meld.

Step 7: Serve hot, garnished with grated Parmesan cheese if desired.
